chicken mandi
The Arabian Chicken Mandi Recipe is a delicious preparation of chicken cooked with mandi powder served over a layer of basmati rice. It is packed with flavours and taste of the perfect blend of spices. Serve it along with raita for a delicious meal.
The word 'mandi' comes from the Arabic word nada, meaning 'dew', and reflects the moist ‘dewy’ texture of the meat. The Mandi Masala is a spice mixture made by dry roasting whole spices which give the main flavour to this dish.
Mandi is a delicious combination of rice, chicken and a mixture of spices. Traditionally, Mandi is cooked in a tandoor but this is our version to make the Mandi at home on a stovetop. Mandi is considered as healthy meal when compared to our traditional Indian biryani, as we use less oil in the
recipe.
Ingredient
Chicken , with bones 100 gram
1 Onion , finely chopped
3 (Bay leaves (ورقة الغار
2 Cardamom (هيل) Pods/Seeds
2 Cloves (مسمار)
2 (قرفةCinnamon Stick (
Salt , to taste
3 cups Basmati rice
7 cups Water
1 cube meggi
1 chop coal for smell BBQ flavor
1\4 cup oil for fried onion and for add rice and chicken
Method
step 1
.add water in a large saucepan for boiling chicken,spicy and leave it until chicken cooked
step 2
Heat a small saucepan on medium heat,and chopped onion and fried until become brown then put aside. also keep oil aside

Burn chop coral then leave in the oil we had fried onion cover it tightly , wait until smoke gone

Put salt, cube Maggie and fried onion in saucepan which chicken boiling .

When chicken cooked, remove it and put rice wait for water disappeared, low heat and cove the sauce pan until rice cooked.

prepare for coloring rice and chicken in small bowl put half table spoon saffron color and 2 spoon kawara water optional mixed together and put 2 table spoon of water .

spread it gently in chicken become yellow.and the rest add to rice without stirring

Also spread on chicken and rice the oil we had fried onion to give BBQ smell ,put chicken into the oven 200c until the skin become roasted.

serve mandi rice with smoked chicken with dogos sauce and fatosh salad
